The Right Way to Use Salt When Cooking Food

Salting food correctly is a message of good food. While salt is a very important seasoning in cooking, it can either make or break a dish. But if you know how to use salt in your food, you can make it work magic from the way your dishes look and smell.

Even a plain pinch of salt can bring out flavor, even out bitterness, and neutralize different tastes from different ingredients. When salt is added in the various stages of the cooking process, it intensifies the natural flavors and aromas in foods making it quicker to combine with other ingredients.

Meat, Poultry and Fish

To get the highest flavor, add salt to meat, fish and poultry before cooking. Salt will force juices out of the meat and prevent it from browning. Salting meat a few days before cooking can give amazing results in your dishes. When grilling, apply salt to meat earlier so it will not pull juices out of the food. For your fish and seafood, soak seafood in salted cold water for about 15 minutes before preparing as desired.

Sauces and Marinades

Salt is an essential ingredient in sauces, seasonings and marinades. It draws the water out of the food being marinated, giving food a more concentrated flavor. One of the simplest but delicious ways of making a good sauce is to add a little salt while the dry ingredients like garlic and onions are being sauted, add the liquid before the final salting.

Food That Requires Sauting

In cooking dishes that requires sauting, such as soup and chowder, add salt to the ingredients during the sauting process before adding the liquids. Once your dish is done, taste and adjust the salt if necessary.

Vegetables

For vegetables, salt water first before boiling or blanching. Salt will help to preserve the green color in cooked vegetables, such as cauliflowers to keep them from yellowing. Salt steamed veggies right after cooking. To poach vegetables such as asparagus, add salt to the water and simmer for a few minutes. Roasted and grilled vegetables should only be salted prior to cooking while the raw veggies and fruits should be salted just before serving.

Salads

It is normal to put salt on salads, just don't use too much. For a great-tasting freshness in your salad, start with a good salad vinaigrette. Dissolve salt well to the vinegar before adding the oil. Sprinkle a pinch of salt to your greens and toss prior to dressing.

Pasta
Adding a liberal amount of salt to the cooking water will bring out the natural taste of the pasta and boost the flavor of the finished dish. Let the water come to a rolling boil before adding salt. Salting the water prior to boiling will take it longer to boil.

Desserts

Salt makes the same thing to sweet foods that it does to savory foods. It has the power to bring out bright flavors from within. Since desserts are sweet, make sure to add less amount of salt. A small pinch of salt is usually enough to give some extra zing to a plain or mild-flavored yogurt fruit dip. Sprinkling slices of watermelon with just a pinch of salt can sweeten the taste of the whole watermelon.

Sometimes, adding salt gradually while preparing food may sound like you are using too much salt, but it's not. If you work with salt in stages, you are allowing flavors in the dish to fully develop, and the result? Lesser salt but more delicious and healthy dishes!

Just remember the rule of thumb, "If you're going to put salt on anything, a small amount is all you need to reveal the desired flavor of the food", and for as long as you don't over-do it, then you're making good food.

Venezuelan-Style Grilled Skirt Steak

You'll need to grab a few things at the store. This list is pretty long, but the price you'll pay for the beef is well worth it. Start with a skirt steak. You can grab a large one, a few small ones, it's up to you. Next, we'll need 3 mangoes, white vinegar (small), a red onion, golden raisins, garlic, red pepper flakes, cumin, chili powder, and kitchen essentials salt, black pepper, olive oil (or any type you like, IE, vegetable, corn, etc), and sugar.

Marinade and Steak                                                   
1  lime                                                                     
1  tablespoon  hot sauce                                 
2  garlic cloves, pressed                                 
1  tablespoon  olive oil                                              
1  pound skirt steak                                        

Arepas
1 1/4  cups warm water
1  teaspoon olive oil
1/8  teaspoon salt
1 cup harina pan (corn flour)
1/2  cup (2 ounces) cotija cheese, grated                                                

Olive Topping
1/2  small red onion, finely chopped
2  plum tomatoes, seeded and diced
1/2  cup thinly sliced green olives
1/4  cup finely chopped fresh cilantro
2  tablespoons lime juice
1  tablespoon  hot sauce

For marinade and steak, press lime into Pinch Bowl using Citrus Press. Add hot sauce, garlic and oil; whisk together with Stainless Mini Whisk. Using Boning Knife, trim any visible fat from steak and cut crosswise into 4-inch pieces. Place steak and marinade into resealable plastic bag; refrigerate 20 minutes or up to 2 hours.

For arepas, combine water, oil and salt in Classic Batter Bowl. Add harina pan; mix well until dough starts to form. Add cheese and mix well. Divide dough into 4 pieces; roll into 4-inch disks.

Heat Grill Pan over medium heat 5 minutes. Spray pan with oil using Kitchen Spritzer. Grill arepas 15-20 minutes or until golden brown, turning every 5 minutes using Small Slotted Turner; set aside and keep warm.

Meanwhile, for olive topping, combine ingredients in Small Batter Bowl using Mix 'N Scraper(R).

Heat Grill Pan over medium heat 5 minutes. Remove steak from marinade; discard marinade. Cook steak 4-6 minutes or until Pocket Thermometer registers 145°F, turning once. Carve steak across the grain into thin slices. Top arepas with steak and olive topping.   

Yield: 4 servings

Home Style Cajun Chicken - No Matter Where You Live

Eating authentic cuisine from a certain place is definitely a sought-after experience, just like when eating Cajun chicken. However, one does not have to exert too much effort and travel all their way into the country just to be able to taste the delectable dish.

Cajun chicken tastes like most Southern dishes do. They are all made up of grains, usually rice, with a mixture of meat or seafood and vegetables and then added with spices, the most distinct flavor in any Southern meal.

  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 3 pounds chicken wings, cut into drumettes and flats
  • For the Sauce
  • 1/4 cup butter
  • 1/4 cup Louisiana-style hot sauce
  • 1 tablespoon Worcestershire sauce
  • Type of fire:two-zone indirect
  • Grill heat:medium-high

Procedures

    In a small bowl, mix together baking powder, paprika, garlic powder, onion powder, thyme, oregano, cumin, salt, pepper, and cayenne.

    Pat chicken wings dry with paper towels. Place wings in a large bowl and sprinkle seasoning mixture, tossing to evenly coat. Arrange wings in a single layer on wire rack set inside a baking sheet lined with aluminum foil, leaving a little space between each wing. Place baking sheet with wings in refrigerator for 8 hours to overnight.

    When ready to grill, melt butter in a small saucepan over medium heat. Stir in hot sauce and Worcestershire sauce. Set aside.

    Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place the wings skin side up over the cool side of the grill, cover, and cook until skins are crisp and and browned, about 45 minutes.

    Transfer wings to a large bowl. Add in sauce and toss to thoroughly coat wings. Transfer to a platter and serve immediately.

Disadvantages of Ready cooked meals.

The greatest disadvantage of ready cooked meal is the adverse effect that it has on one's health.
It may contain harmful bacteria too. Frying destroys most of the essential nutrients from the food. Very small amounts of vegetables and fruits are normally present in ready cooked. Moreover, 'serving larger portions' when most people don't need extra portions has led to several health problems. We require a small amount of salt to maintain the health of the cells and tissues. Such type of food is an important contributor to obesity in the American population. Given the sedentary lifestyle that we lead today, the excess fats and calories that we take in with ready cooked is not used up completely. The result is that these accumulate in our body as fat deposits.

1.       They make you lazy.
Ready meals simply by cooking things in batches and making sure they are ready in advance. For instance, if I cook lasagna, I always come up with a huge dish –- even if there may only be a few of us eating it. Public Health Safety of Bacteriophages in Ready-To-Eat Meats & Poultry Products


Recently approval has been given by the USFDA for use of the combination of six bacterial viruses or bacteriophages as a food additive. These bacteriophages are to be used on ready-to-eat meats and poultry to kill strains of listeria monocytogenes prior to their packaging. 

Listeria monocytogenes are of major public health concern because it can cause serious infection in pregnant women, newborns and adults with weaken immune systems. It has been estimated that 2,500 people become seriously ill with listeriosis each year. Hence there is a growing need to develop effective treatments against pathogenic microorganisms such as listeria monocytogenes. The approval of bacteriophages by the USFDA for use in ready-to-eat meats and poultry therefore serves to address this public health problem.
However, it is uncertain whether bacteriophages are safe enough to be used in ready-to-eat meats and poultry without causing any short or long term health effects. Because scientific studies to date have not shown conclusively to confirm or deny the safety of bacteriophages in ready-to-eat meats and poultry. It is hoped that the apparent expeditious use of bacteriophages in the light of insufficient scientific data may not compromise the public's health. The purpose of this article is to bring to the forefront a concise review of the possible public health concerns associated with the use of bacteriophages in ready-to-eat meats.
What are bacteriophages?
The term bacteriophages are derived from the Greek word meaning
"bacteria-eater". Bacteriophages were discovered around 1915 and have contributed significantly to the understanding of viruses or virology. They provide an alternative to costly antibiotics and can be developed mush faster and at a lower cost.
How can bacteriophages be used to control bacteria?
Bacteriophages are first grown in a preparation containing the target bacteria. The preparation is first purified before use on food. The bacteriophages are then sprayed onto ready-to-eat meat and poultry at a concentration of 1 ml per 500 cm2 of food surface. Bacteriophages then seek out bacteria and infect them during its life cycle. The life cycle of bacteriophages can follow either the lytic or lysogenic pathway that results in lysis of the bacterium.
In the lytic cycle, the virulent bacteriophage binds to the bacterium and releases its DNA into the host cell. This triggers a series of events that leads to the lysis of the host cell, resulting in cell dealth. Bacteriophages multiply much faster than bacteria and infect many bacteria in a short time period thereby eliminating them or controlling their growth and numbers to acceptable levels.
In the lysogenic cycle, the temperate bacteriophage binds to the bacterium and releases its DNA into the host cell, which then binds to the host cell DNA and form a prophage. This prophage has the potential to lyse the resulting bacterium causing dealth.
Are bacteriophages safe to consume?
Bacteriphages are bacteria-viruses. Viruses contain either DNA or RNA in their genetic make. This genetic material is believed to be transferred only to bacterial cells and not normal cells. But, has this specificity been rigorously tested in experimental animals/models and demonstrated in clinical trials? Strong scientific evidence is lacking and there is an urgent need for more research in this area. Viruses may induce an immunological response in vivo and in normal cells causing the development of secondary infections especially in susceptible individuals such as young children, old people, pregnant women and immuno compromised persons with HIV/AIDS.
What are some of the public health concern regarding the safety of bacteriophages?
Some of the public health concerns regarding the safety of bacteriophages include:
o Failure to select specific phages against the target bacteria in vitro, before using them on ready-to-eat meats and poultry may increase the possibility of developing secondary infections.
o Lack of availability and/or reliability of bacterial laboratories for carefully identifying the pathogens involved, therefore making selection of specific phage very difficult.
o Endotoxins can be released as a result of lysis of bacteria which could lead to health complications such as liver edema and pain in the associated abdominal region if meat or poultry is improperly cooked.
o Lack of thorough understanding of the heterogeneity and "mode of action" (lytic or lysogenic modes of action) of bacteriophages may affect their ability to destroy target bacteria.
o Bacteria resistant bacteriophages and the apparent ineffectiveness of bacteriophages to kill target bacteria.

- packaging that is not damaging to health and environmentally friendly;
- Labels that disclose all ingredients clearly
- No misleading advertising or ingredients that are unpronounceable;
- No trans fats or refined grains.
The meals should contain lots of antioxidants, whole grains, vitamins and minerals and monounsaturated fats.

Breakfast time crunchy, organic, whole grain, gluten free cereals and organic Greek yogurts, coconut and almond milks, rice milk, free range organic eggs, and healthy spreads will start you off on a good note.
Healthy in-between meal snacks for a quick pick-me-up, which are fat free and packed with energy will keep your appetite in check.
