Italians insist upon fresh ingredients in their food, and their herbs are no exception. There are a variety of fresh herbs common in Italian cooking. Most people are familiar with the little bottles of dried herbs from the grocery store, but if you haven't prepared food with fresh herbs, you really need to give it a try.

What's the distinction between an herb and a spice?
Spices are made from the seeds, root, fruit or barks of aromatic plants, while the herbs primarily consist of the leaves and stems. Herb plants contain oils which are very fragrant and add the distinctive aroma and flavor that Italian food is known for.

A few of the most common herbs are basil, oregano, parsley, rosemary, sage and thyme.
Basil is a member of the mint family, and like all mint herbs, it is extremely fragrant when picked fresh. Sage has long, broad leaves and is the herb which flavors the traditional Italian Saltimbocca dish.
Sage is also very fragrant so be sure you don't use too much and overwhelm your meal.

Thyme is another herb of the mint family, but in contrast to the other mints, it has tiny leaves that can easily be thrown whole into your sauce or dish. I use this herb frequently because its mild flavor goes well with everything and won't overshadow the rest of your dish.

There are some basic rules for cooking with fresh herbs. Fresh herbs are more delicate than dried and can lose some of their flavor when cooked too long. For slow cooked sauces and meats, you can add the fresh herbs at the last minute keeping their flavors and aromas intact. On the other hand, the oils in dried herbs are concentrated requiring a smaller amount of than fresh herbs in your recipes. A good general rule of thumb is to use one tablespoon of fresh herbs for every 1 teaspoon of dried herbs needed in a dish. But remember, cooking is an art and you can use as much or as little as you like.

3 cups water
2 tbsp yeast
2 cups milk
1 1/2 cups butter
3 cups sugar
2 tbsp salt
8-9 cups flour
Directions
Mix ingredients in bowl and let rise. Knead and let rise for second time on table. Flatten with hands and cut with donut cutter.
Flour pan and place cut donuts onto pan
Deep fry until golden brown
Dip in Icing sugar and let stand. Let dry then move them onto serving tray.

Italian Easter Bread

Ingredients
  • 3 cups flour
  • ¼ cup sugar
  • 1 package active dry yeast
  • 1 teaspoon salt
  • ⅔ cup warm milk
  • 2 Tablespoons butter, softened
  • 7 eggs
  • ½ cup mixed candied fruit, chopped
  • ¼ cup almonds, chopped
  • ½ teaspoon anise seed
  • Vegetable oil

Procedure

  1. In a mixing bowl, combine 1 cup flour, sugar, yeast and salt.
  2. Add milk and butter; beat 2 minutes on medium.
  3. Add 2 eggs and ½ cup flour; beat 2 minutes on high.
  4. Stir in the fruit, nuts, and anise seed, mixing well.
  5. Stir in enough remaining flour to form a soft dough.
  6. Place on a lightly floured board and knead until smooth, 6 to 8 minutes.
  7. Place in a greased bowl; turn once. Cover and let rise in a warm place until doubled, about 1 hour.
  8. If desired, dye remaining eggs (leave eggs uncooked); lightly rub with oil.
  9. With a fist dipped in flour, punch dough down. Divide in half and roll each piece into a 24-inch rope.
  10. Loosely twist ropes together; place on the baking sheet and form into a ring. Pinch the ends together.
  11. Gently split ropes and tuck eggs into openings. Cover and let rise until doubled, about 30 minutes.
  12. Preheat oven to 350°F.
  13. Bake for 30 to 35 minutes, or until golden brown. Remove from the pan and cool on a wire rack.
Serves about 6.

Panettone (Italian Christmas Bread)

Ingredients

  • 4 Tablespoons yeast
  • 2 cups warm water
  • ½ pound butter, melted
  • 4 teaspoons salt
  • 1 cup sugar
  • 4 eggs, beaten
  • 6 egg yolks, beaten (discard egg whites or save for another use)
  • 10½ cups flour
  • 2 cups citron, sliced fine
  • 2 cups raisins, seedless

Procedure

  1. Dissolve yeast in the water. Mix in the butter, sugar, salt, eggs, and yolks.
  2. Stir about 10 cups of flour into the butter and yeast mixture until blended.
  3. Spread a little flour on a board. Turn dough out onto the board and knead for 8 to 10 minutes. When the dough is soft and smooth, knead in the citron and raisins.
  4. Place dough in a greased, round pan, and brush the top with melted butter.
  5. Cover, and allow to rise until the dough has doubled in bulk (about 1 hour).
  6. Preheat oven to 425°F.
  7. Using a sharp knife, cut a deep cross in the top of the loaf.
  8. Bake for about 8 minutes, or until the top begins to brown. Lower heat to 325°F and bake for 1 hour more.
Serves about 10

Classic Pasta Primavera Recipe

Classic Pasta Primavera Recipe ( Italian Food )


Ingredients

  • 1/2 pound angel hair pasta or spaghetti
  • 1 small bunch broccoli, about 1 heaping cup of florets
  • 1 small zucchini, diced
  • 4 asparagus spears
  • 1/2 cup peas, fresh or frozen
  • 1/2 cup snow peas
  • 3 minced garlic cloves
  • 3 Roma or other paste tomatoes, seeded and diced
  • 12 basil leaves, chopped
  • 4 Tbsp. butter
  • 1/4 cup chicken broth (use vegetable broth for vegetarian option)
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt

Method

1 Get a large pot of water boiling. Salt it well. It should taste like the sea. Fill a large bowl with ice water. Boil the broccoli for 1 minute. Add the asparagus and boil another minute. Add the snow peas and boil for 30 more seconds. Remove all the vegetables and plunge them into the ice water. Once they’re cool, drain in a colander.
If you want, you can boil your pasta in the same pot you boiled the vegetables in, or you can start over and boil new water; I use the same water.
2 In a large sauté pan, heat the butter over medium-high heat. When the butter is hot, add the garlic and zucchini and sauté 1 minute. Add the diced tomatoes and sauté another 2 minutes, stirring often.
3 Pour in the chicken or vegetable broth and turn the heat to high to bring it to a boil. Add the cream and toss in all the vegetables you boiled, plus the peas. Stir to combine. Turn the heat down until the cream-chicken broth mixture is just simmering, not boiling.
4 Add the parmesan cheese and stir to combine. If the sauce seems too thick – it should be pretty thick, but not gloppy – add some more chicken broth, cream or water.
5 Boil the angel hair pasta. Note: If you are using spaghetti, you will want to start cooking it before you begin sautéing the garlic and zucchini. Angel hair will only need 1-2 minutes to cook, vermicelli or spaghetti can take 8-12 minutes.
As soon as the pasta is done, transfer it with tongs into the sauce and stir to combine. Add the basil now, and taste for salt. Add salt if needed. Grind some black pepper over everything and serve immediately.
You will want a dry white wine with this, ideally a dry French white.

Pizza Margherita ( classic traditional Italian pizza )

SERVES

No, Pizza Margherita is not named after the drink. It's actually a classic traditional Italian pizza recipe with fresh mozzarella that your whole gang will want to make part of their own tradition.
What You'll Need:
  • 1 pound pizza dough, thawed if frozen
  • 1 (14 ½-ounce) can whole tomatoes, drained and coarsely chopped
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 pound fresh mozzarella cheese, patted dry and sliced 1/8-inch thick
What To Do:
  1. Preheat oven to 450 degrees F. Coat a 12- to 14-inch pizza pan with cooking spray.
     
  2. Using your fingertips or the heels of your hands, spread dough to cover bottom of prepared pan. Push dough out to edge of pan, forming a rim. With a fork, prick dough 15 to 20 times.
     
  3. In a small bowl, combine all remaining ingredients except mozzarella cheese; mix well. Spread mixture evenly over dough then top with mozzarella slices.
     
  4. Bake 10 to 12 minutes, or until crust is crisp and brown. Slice and serve.
