Preheat the oven to 400 degrees F and line a pair of baking sheets with aluminum foil. Cut the chicken breasts into 1 inch cubes. Mix the breadcrumbs, cheese, salt, pepper, oregano, and thyme in a Ziploc bag and shake it well.
Dip the chicken in the oil, and then roll it in the crumb mixture in the Ziploc bag. Bake the chicken on aluminum foil covered baking sheets for 10 minutes, then serve them with a dip.

10 Reasons to Cook Italian Food Instead of Chinese Food Tonight

First of all, let me just say this. I love both Chinese food and Italian food.  Don't get all excited and start thinking I am bashing on any particular culture. I am not; in fact I am attempting to take a man's view on cooking Italian.   Both styles are mega delicious and should be consumed in great quantities.
1.    Italian wine: Need I say more? Ever hear of a good Chinese wine? I think not.  Maybe a Saki, but as far as I am concerned, it's an acquired taste.
2.    Complexity: Husbands who don't venture into the kitchen much tend to feel more comfortable with something not as complex. Spaghetti and meatballs is really not too tough.
3.    Lots of variations: You can start with any kind of pasta, dump anything on top of it, and you have transformed the ordinary into the extraordinary. Anything in your pantry or refrigerator is fair game.
4.    Tomatoes: Tomatoes are beautiful. They come in so many varieties, and can be spiced in so many ways. How can you not like them?
5.    Simple ingredients: We have very good Chinese friends who invited us to dinner once. She asked me to grab something out of the refrigerator for her while she was creating our culinary delight. Upon opening the refrigerator, I saw items that I have never seen in my refrigerator before. There was funky plant life and animal parts that I did not think you could buy much less eat. This was one well stocked unit but I would have to imagine it would take a while to buy all those ingredients. Italian refrigerators seem a little simpler. Besides, gizzards and chicken feet just don't work for me.
6.    Neater noodles: Italian noodles are just more fun to me. You get all kinds of noodles in all sorts of shapes and sizes. You can buy them in boxes and bags or make them yourself. Chinese noodles, while delicious, seem to have less variety.
7.    Easy to make: For some reason I just can't get my white Anglo Saxon attempt at Chinese food to taste authentic. I never seem to have the one ingredient that creates the magic touch. In Italian cooking, I have  everything I need,( which is the fab four: olive oil, onions garlic and basil), and it is usually just comes down to adding more of "this" or "that'
8.    Impersonations: I just don't do a good imitation of an Asian, but I can get you going with my rendition of  Vieto ala beanie. Everyone can do a good Italian imitation. This is the part where cooking is becomes fun. (its easier to make fun of your own) I love to entertain my children with my cheesy attempts at cultural   impressions. It's better received to kiss your fingertips in appreciation than to muster up a large belch.
9.    Italian food tastes better the next day: My grandmother would make sauce, but we were never allowed to  eat it until the next day. That's because all the flavors came together while it sat overnight in the refrigerator after assembly. What I once thought was a cruel thing to do to a boy, turned out to be a rewarding exercise in patience. (check out our pasta fagioli, most excellent the next day)

Garlic: As far as I am concerned, garlic is the center of the universe. I can't get enough of it. I love the smell of it, I like it on my hands, I like the way it smells in the kitchen, I like it on bread, in sauce, on pizza or in pesto.  Heck if I could get away with garlic sheets on the bed. (you get the idea)  Italians love to cook with it and its versatility is certainly bound to make it the signature of any dish. Sauté' some with some onions and olive oil, it can make a grown man cry.


Spaghetti bolognese, traditional italian food


RECIPE: The perfect bolognese
Serves four people
Ingredients:
2 tbsp olive oil
6 rashers of streaky 'pancetta' bacon, chopped
2 large onions, chopped
3 garlic cloves, crushed
2 carrots, chopped
Stick of celery
1kg/2¼lb lean minced beef
2 large glasses of red wine
2x400g cans chopped tomatoes
2 fresh or dried bay leaves
salt and freshly ground black pepper
800g-1kg/1¾-2¼lb dried tagliatelle
freshly grated parmesan cheese, to serve
1. Heat the oil in a large, heavy-based saucepan and fry the bacon until golden over a medium heat. Add the onions and garlic, frying until softened. Increase the heat and add the minced beef. Fry it until it has browned. Pour in the wine and boil until it has reduced in volume by about a third. Reduce the temperature and stir in the tomatoes and celery.
2. Cover with a lid and simmer over a gentle heat for 1-1½ hours until it's rich and thickened, stirring occasionally.
3. Cook the tagliatelle in plenty of boiling salted water. Drain and divide between plates. Sprinkle a little parmesan over the pasta before adding a good ladleful of the sauce. Finish with a further scattering of cheese and a twist of black pepper.

Forget what you know about baked shells: The creamy texture of homemade ricotta makes all the difference. The multiple elements, including a take on Marcella Hazan’s tomato sauce, can be made ahead. Easy to cook ''Stuffed Pasta Shells''.

For the tomato sauce
  • 1 28-oz. can Italian plum tomatoes
  • 4 oz. (8 Tbs.) unsalted butter, cut into pieces
  • 1 medium onion, peeled and halved
  • Pinch granulated sugar
  • Kosher salt
For the besciamella sauce
  • 2-1/2 oz. (5 Tbs.) unsalted butter
  • 1 3/8 oz. (5 Tbs.) unbleached all-purpose flour
  • 5 cups whole milk
  • 1 small bay leaf
  • 1/4 tsp. freshly ground white pepper
  • 1/8 tsp. freshly grated nutmeg
  • Kosher salt
For the filling
  • Kosher salt
  • Olive oil as needed
  • 2 large eggs
  • 4 cups homemade ricotta (drained for 30 minutes to 2 hours) or good quality purchased
  • 8 oz. (2 cups) coarsely grated fresh mozzarella; more for topping (optional)
  • 4 oz. prosciutto cotto, cut into 1/4-inch dice (3/4 cup)
  • 1-1/4 oz. (1-1/4 cups) finely grated Parmigiano-Reggiano
  • 3/4 oz. (3/4 cup) finely grated pecorino romano
  • 1/3 cup finely chopped fresh flat-leaf parsley
  • Freshly ground black pepper
  • 1 lb. dried jumbo pasta shells
Make the tomato sauce
Put the tomatoes and their juice in a 3-quart saucepan and crush the tomatoes to bite-size pieces. Add the butter, onion, sugar, and 1/2 tsp. salt. Simmer over medium-low heat until the thickened slightly, about 45 minutes. Discard the onion. Season to taste with salt.
Make the besciamella sauce
In a 3-quart saucepan, melt the butter over medium heat. Whisk in the flour and cook, stirring, until a pale tan color, about 2 minutes. Slowly whisk in the milk, then add the bay leaf, white pepper, nutmeg, and 2 tsp. salt. Whisking frequently, bring to a boil, and then cook until thickened, about 5 minutes. Strain through a fine-mesh sieve into a bowl and let cool.
Fill and bake
Position a rack in the center of the oven and heat the oven to 375°F. Bring a large pot of well-salted water to a boil. Have ready a large bowl of ice water, a lightly oiled large rimmed baking sheet, and two 9x13-inch baking dishes. (Alternatively, have ready individual baking dishes.)
In a medium bowl, beat the eggs, then stir in the ricotta, mozzarella, prosciutto, 3/4 cup of the Parmigiano, 1/4 cup of the pecorino, the parsley, 1 tsp. salt, and 1/2 tsp. pepper.
Boil the shells according to package directions until just al dente. Drain and transfer to the ice water to stop the cooking. Drain again and transfer to the prepared baking sheet.
Spread 3/4 cup of the besciamella in the bottom of each baking dish (or divide it among individual dishes). Spoon or pipe 1 heaping Tbs. of the filling into each shell and arrange the shells, filling side up and close together, in the dishes. Pour the remaining besciamella over the shells, then top with the tomato sauce, which may not cover completely. Top with the remaining Parmigiano and pecorino, and with more grated mozzarella, if using. Bake until bubbly, 30 to 40 minutes. Serve hot.
Make Ahead Tips
The sauces can be made 2 days ahead; cover and refrigerate.
The shells can be stuffed, coated with the sauce, and frozen. Thaw in the refrigerator for 24 hours before topping with cheese and baking.

Pizza Margherita ( classic traditional Italian pizza )

Pizza Margherita

SERVES 
COOK TIME 10 Min
No, Pizza Margherita is not named after the drink. It's actually a classic traditional Italian pizza recipe with fresh mozzarella that your whole gang will want to make part of their own tradition.
What You'll Need:
  • 1 pound pizza dough, thawed if frozen
  • 1 (14 ½-ounce) can whole tomatoes, drained and coarsely chopped
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 pound fresh mozzarella cheese, patted dry and sliced 1/8-inch thick
What To Do:
  1. Preheat oven to 450 degrees F. Coat a 12- to 14-inch pizza pan with cooking spray.
     
  2. Using your fingertips or the heels of your hands, spread dough to cover bottom of prepared pan. Push dough out to edge of pan, forming a rim. With a fork, prick dough 15 to 20 times.
     
  3. In a small bowl, combine all remaining ingredients except mozzarella cheese; mix well. Spread mixture evenly over dough then top with mozzarella slices.
     
  4. Bake 10 to 12 minutes, or until crust is crisp and brown. Slice and serve.

Add these biscuit pieces into the boiling soup and cook in an open vessel for ten minutes, bringing to a medium boil, then cover and cook for another ten minutes so dumplings get fluffy and light. For serving, first take out dumplings, then using a soup ladle, spoon into bowls, adding dumplings before garnishing with parsley.
2. Quick Chicken and Broccoli Pie :
Ingredients: 10 ounces frozen chopped broccoli, defrosted and drained, 6 oz Cheddar cheese, a cup of cut-up cooked
chicken, 1/2 cup chopped onion, 1/2 cup Original Bisquick mix, a cup of milk, 1/2 tsp salt and 1/4 tsp pepper and two eggs.
Method: pre-heat oven to 400 Degrees F and grease a 9-inch pie dish while you sprinkle broccoli, a cup of cheese, chicken and onion in to the pie plate. Mix and blend well the Bisquick mix, milk, salt, pepper and eggs then pour it into pie plate and place into the oven to bake for half an hour; insert knife into the center to check if done (if it comes out clean), before sprinkling in the remainder of the cheese and browning the top till it melts. Cool a few minutes before serving.
3. Spiral Sandwich Idea :
Ingredients: a 15-inch diameter soft cracker bread, single herb-and-garlic cheese spread, 8 oz of finely sliced smoked turkey, 1 big tomato finely sliced, 6 oz finely sliced Swiss cheese, 18 leaves of fresh spinach.
Method: Spread cheese on bread in an even layer; place turkey, tomato, Swiss cheese and spinach on it taking care to leave 4" on one side covered only with cheese spread. Roll up bread starting from the turkey-layered side and trim edges before cutting the rolled-bread into 1-inch sandwich slices.
4. Ham and Swiss Pie :
Ingredients: a cup and a half of fully cooked smoked boneless ham, one of
grated Swiss cheese, one forth cup chopped onion, half cup Original Bisquick mix; single cup milk, 1/4 tsp salt, 1/8 tsp pepper, two eggs, a single tomato sliced and a green bell pepper sliced into rings.
Method: Pre-heat oven to 400 Degrees F, while you grease the 9-inch pie dish; shaking ham, cheese and onions on the dish comes next, followed by stirring in the Bisquick mix, milk, salt, pepper and eggs till all the stuff is well mixed. Now pour the mixture into the pie plate and bake for half an hour or another 10 minutes till the knife inserted in the middle comes clean. Cool before topping with tomato and bell pepper.
