If you speak to many Italian chefs and ask them what is there favorite dish as I have you maybe surprised what they say in reply. They would say a simple fresh pasta like spaghetti or fettuccini with a simple tomato sauce and that it is (maybe a little grated Parma cheese).
A simple tomato sauce is very easy to put together and requires the following ingredients (this recipe usually takes 30 minutes to put together):-
-1 tbsp. olive oil
-3-4 cloves of garlic whole
-half red medium onion diced
-2x14-ounce can diced or crushed tomatoes
-half cup red wine (optional)
-Salt, pepper, other seasonings to taste
You take the olive oil and heat of a low-medium heat then once it is hot enough add you add you red onion (we use a red onion as it is sweeter). You need to saute the onion for about 7 minutes until they are starting to brown around the edge.
The add the canned tomatoes you bring the content up to a simmer and the add the whole gloves of garlic plus salt and pepper to taste. You can also add the wine too (I personally don't like to use the wine). People like to add dried herbs too at this point but I just like to have the sweetness of the red onion plus the garlic as my flavoring.
Once you have added your ingredients then you simmer it for a minimum of 20 minutes to thicken up and let the cloves of garlic to add a subtle flavor. You can simmer for up to 45 minutes if you like a thicker sauce. If you sauce does get too thick you can add some water anytime.
This sauce is great just on fresh pasta for a great dish that many Italian chefs consider their favorite meal or use it for lasagna or any other dish that requires a tomato sauce. Whatever you use it will always be better than pre-made sauce in a jar.
